SUNDAYS ARE FOR…

In our home…

Sundays are for cookies.  Sundays are for running wild.  Sundays are for bicycles.

Sundays are for church.  Sundays are for sunshine.  Sundays are for family.

Sundays are for food.  Sundays are for being together.

Sundays are for learning.  Sundays are for loving.

God gave me two little boys who are complete opposites.  While one would prefer to live his life running wild and barefoot through the woods, the other often tells me “I don’t do outside”.  Finding a balance of activities that pleases them both at the same time is nearly impossible.   Sundays are our time for that.  Single mama life means that right now I work about 60 hours a week, have about 20 hours a week of therapies with Wyatt, all while trying to make sure all school drop of and pick ups happen on time, photo shoots, editing, sick days, doctors appointments, church music, housework, mountains of laundry, and life all happen all without anybody dying or some catastrophe ensuing. Life with boys means most of that all happens as a total comedy of errors, covered in dirt and giggles.

One time management technique I employ is pre-cooking food for the week on Sundays.  On a normal week day we leave the house at 7:15am don’t get home until after 6:30pm and with hours of homework for Wyatt and photo work for me to do, having dinner ready to go when we get home is a life saver.  I usually cook up a weeks worth of cookies and snacks for the boys while I am at it.  Wyatt recently decided He wanted to start helping with that “chore” every week (which really means he wanted to pick what kind gets made…always oatmeal raisin.)

This is what Sunday afternoons looks like for us.  Riley running wild and barefoot outside on his bike while Wyatt and I cook and bake (aka Wyatt eats cookie dough).

Wyatt’s Chewy Oatmeal Raisin Cookies:

Blend in bowl with mixer for at least a minute:
 1 stick of softened salted butter
1/2 Cup of Brown Sugar
1/2 Cup of White Sugar
1 tbsp of vanilla extract
1/2 tsp of salt
1 egg
1 tbsp of milk
1 tsp of cinnamon

Add and mix with mixer for at least another minute:
1 cup of unbleached flour
1/2 tsp of baking powder
1/2 tsp of baking soda

Add and mix with large spoon:
1.5 cups of old fashioned oats
3/4 cup of raisins

Drop by large spoonfuls onto greased baking sheet
Bake at 375 degrees for about 10-12 minutes until edges turn golden brown
